This kind of artichoke and its processing are the same as those "alla cafona" and "con il gambo"; it differs from these ones for the lack of stem and grilling.
Agnoni's Farm, located in the south of Rome between the mountains and the sea, has an ancient history of rural background, represented by a family who has always been devoted to his homeland.
